Vineyards
Where this wine begins
Long-proven vineyard sites are selected on decomposed granite and shale. The well-drained granite soils contribute minerality and elegance, while the clay-rich shale subsoils retain water and produce fuller wines with concentrated flavour and complexity. These contrasting styles become complementary blending components.
Winemaking
How it is made
The grapes are hand-harvested early in the morning and handled reductively to retain freshness and cultivar character. Small parcels are fermented separately. Chenin Blanc and Sauvignon Blanc undergo a cool, slow fermentation in stainless steel at 10–13°C, followed by seven to eight months on the lees with regular stirring. Chardonnay and Roussanne mature for five months in older small French barrels. The final blend then receives another two months on the lees before bottling, building richness, structure and elegance.
