Vineyards
Where this wine begins
The south-facing Stellenbosch vineyards sit approximately 180 metres above sea level and face the prevailing summer winds. Their altitude and exposure temper the warm growing season, extending hang time and building layers of fruit and textural expression. Grapes are hand-harvested early in the morning and taken directly to the cellar.
Winemaking
How it is made
After initial settling, the wine is fermented in stainless steel at a cooler temperature than is typical for red wine, preserving vibrant red-fruit flavour and encouraging soft tannins. It then matures for eight to ten months in second- and third-fill barrels. Approachable now, it is also made to continue developing over the next eight to ten years.
