Granite soils bring freshness while shale soils add roundness and fruit structure; north-west-facing slopes provide warm days and cool nights for colour and stability.
Winemaking
How it is made
Early-harvested grapes are destemmed and cold-soaked before regular pump-overs extract colour and fruit. Part of the wine is racked from the skins and the remainder stays on them before six months on the lees.
